ok, but what if I want to, just for example, change the status in Jira, when an issue in ServiceNow gets deleted?
Also, the same vice-versa, change the status in Snow when an issue in Jira gets deleted.
Can Exalate “catch” such delete event?

Yes there is.
You can use the Post Exalate Processor which is available on the Jira On Premise add-on
The last example shows how to act on the fact that the servicenow issue is deleted.
Note that this is an early access feature, so YMMV
