We use different repos in GitHub, and issues are created in specific GitHub repos depending on one field from Jira.
After the creation of an issue in Jira and GitHub (with first sync), if we change that field in Jira, is the issue in GitHub transfered from previous repository to the new one?

No that would not happen.
After the firstSync, that Jira field is just another field that syncs over to its twin issue in GH.
